Zombie Jesus Day

When people think of me, I worry sometimes that they view me as some sort of emotionally underdeveloped person who is stuck in their childhood.  Mostly because I enjoy things like dying Easter eggs and watching Disney movies.  Playing board games and acting a fool all over the place.

But then I realize that there’s nothing to worry about because I have friends in my life who completely 100% get me.  Not only do they get me but they sort of fuel my crazy.

They go out to bars with me and let me ramble on about how the human centipede works and why it’d be worst to be stuck behind a dude in that situation.  (Let’s just say there was a paper representation of balls in my explanation…ahem)

Then the next day they turn up at my door to dye eggs and bake sugar cookies for my office.  I love it.  And in honor of my love for it I tried to watch the Human Centipede on Netflix with them but it wasn’t meant to be. Shucks.

Oh well.  The ladies and I did manage to create some lovely art.  Including such gems as kitties on eggs, cute swirls, and oh…you know….a zombie egg.

Do you think zombie chicks eat brains too?

On a lighter note than the undead….I baked some cookies for my officemates as well.  Tasty sugar cookies.  Sorely lacking in frosting but still tasty.  Maybe next time I’ll ice them…. big maybe.

Out of like 200 cookie cutters in my kitchen, the only Eastery ones I had were a bunny and an egg.

I’m still planning on instituing a “Treats Day” once a month in the office wherein I bake something I’ve been wanting to try and bring it in just so that I can convince people to like me more.  But moreso it’s because I have a stack (mental stack) of recipes I want to try out for baked goods but I don’t want to sit around eating 24 Chocolate Chip Cookie Dough Cupcakes on my own. Probably.

Side note, or rather…end note.  I’ve got two new recipes to try out this week in the neverending saga that is “Amanda learns how to feed herself”.  I’m super excited about both. Om nom noms will be had this week. They WILL.

Monster Muffins

My apartment smells amazing right now!

See, I just made these apple cinnamon muffins.  As part of my new year of revolutions, I’m going to tryin to cook more often and thus be healthier.

Now, I know you may not think muffins are healthy.  But trust me, these are.  And just look at them!  They are huge!

The recipe only makes 6 muffins but I’m hoping they’ll be enough to sustain me for a few days of breakfast.  And let’s go ahead and reiterate how great they smell.  Mmm. Baked goods.

Normally, this is when I’d go into a list of things I plan on changing.  But I find that when I talk about resolutions too much, they’re much shorter lived.  So let’s just say that changes are gradual and are being made…right….NOW.

Oh, I’m just hilarious.  Weren’t you frightened? I know ya were.

Anyway, we took a group trip out to Ikea in Schaumburg and bought a few apartment necessities.  Like a coffee table.  And a book shelf to house my record player and collection.  I didn’t have time to make it amazing yet but here’s a sneak peak:

Anyway, it’s getting late and I’d sort of like to drift off to sleep with the faint smell of muffins if you don’t mind.

Life Update

What’s happened since I last posted? Let’s get straight to the facts.

Fact #1: New Year’s Eve happened.  There was a party. And a broken table. And fun times.

Fact #2: I make delicious chocolate chip cookies.  No seriously.  The added deliciousness of the genuine Mexican vanilla gave them a special kick….in the pants.

Fact #3: Buffy the Vampire Slayer is an awesome show.  If Xander Harris were a Disney character, he’d be Prince Eric from The Little Mermaid.  Think about it looks wise. Yep.

Fact #4: I have 3 job interviews this week.  2 of which are in Chicago.  I want to move to Chicago something desperate.  I really want a job so keep those finger crossed, ya hear me?

Fact #5: I’m in a karaoke contest finale on Friday.  Though I’m not certain I deserve to be.  I’d love to have some support with me there.  Hint hint.  This is also the LAST chance any of you will get to visit Grand Rapids while I’m here.  More hints.  I have a good song picked out.

Fact #6: Johnpants and I are moving in less than 2 weeks.  Hopefully to Chicago.  More than likely back home for an undetermined amount of time.  I hate packing.  Like, I really hate it.  And saying goodbye? No way. I’m terrible at that too.  Darn.  Now I’m sad again.

I’m over giving you facts for today.  I need to get productive and print some stuff fr our drive to the Windy City tomorrow.  Man, that’s still insane to me.

I need a bigger kitchen


I need more.

My recent bout with unemployment has taught me a lot about the importance of hobbies.  And a lot about the way my mind works.

Here I am, sitting on the couch with some huge headphones on, watching the mister play video games.  All of a sudden my boredom bursts out of me and I decide that if I ever want to get anywhere in the baking world, I need to take inventory of what I have to use.

That apparently means that I needed to go through the apartment and find all of my cookie cutters and take a photo of them.  Now, I somehow lost all of my halloween cookie cutters but that’s besides the point.

The point is this: I need more non Christmas specific cookie cutters. I need moustache cookie cutters. And cake shaped ones. And cupcake shaped ones. And acorn shaped ones. And so on.  But I’m unemployed. So I have no idea what to do with that.

Anyway, I blame this on my recent reobsession with baking blogs. Particularly Bake @ 350.  It’s fantastic for inspiration. And time wasting. And teaching me how to do royal icing.

You just wait. I’m going to bake something gorgeous soon. I might buy one cookie cutter for this endeavor.  Eventually you’ll be able to pay me for my efforts. Yep. Special orders for my goodies.

Me Want Cookie

I’m not one to ignore an urge to bake. So when I noticed a certain hankering for chocolate chip cookies the other day I knew I had to work out a way to make some a.s.a.p.

By “work out a way to make some” I mean…buy some stinking eggs.

And that’s just what I did on Monday evening. I went to the store, bought eggs, came home and baked some nom noms.

Looking to please both of us in this here apartment, I decided to use chocolate chips (John) and white chocolate chips (me), which was something I hadn’t done before. I’m a baker, I’m precise, we don’t stray from recipe cards. We like exact measurements.

Anywho, our oven stinks and takes forever to cook things thoroughly but I’m pretty happy with these. They ended up big and thin, but 2 days later they’re still moist and soft so I’m happy. I think it’s the large amount of vanilla that makes them so soft days later. I love vanilla.

John opened the tupperware they were in and said they smelled like dough…I take it as a compliment.

Chocolate Chip Cookies – Momma Style

Cream together:

  • 1 cup butter
  • 3/4 cup sugar
  • 3/4 cup brown sugar
  • 2 eggs
  • 2 Tbsp. vanilla

Mix together separately:

  • 3 cup flour
  • 1 Tsp. salt
  • 1 Tbsp. baking soda

Combine to mixtures and fold in 2 cups chocolate chips (1 cup semisweet, 1 cup white. MMM.)

Preheat to 350. Cook 8-10 min on an ungreased cookie sheet.

Old is the new…new…

Lately, I’ve been completely fascinated by all things old timey.  (Yes, old timey is a phrase now).

I love my bike more than most other things I own.  It’s classic and beautiful with it’s black frame (that matches everything) and adorable wicker basket (for carrying flowers and food).   My recent obsession with old bikes has got me thinking  about my personal style.

Well, not my fashion sense persay.  Moreso my home decor.   My most recent life change of the moment to focus on is the idea of moving to Chicago and attending the French Pastry School.  Selling off the majority of our belongings and buying new old furniture from Craigslist and yard sales upon arrival.  Yes, I understand that this is a fantasy completely not based in my reality, but that’s why it’s there.  I dare to dream of a life full of baking and kitschy home decor.

I love things that look old. That are old.  I want club chairs in tweedy fabrics and couches that have simple lines and long lasting durability.  I want to buy fun kitchen stuff that isn’t practical by any means but looks great on my shelf/table/etc.  Try looking on etsy in the vintage: housewares section and not falling in love with classic pieces. Go ahead.  I dare you.

In other news, I’ve decided I need to do more fun things like doodling (see above) and baking (see my grocery list).  I plan on baking some cookies tonight/tomorrow and having them be tasty.  Also, my mister and I will be traveling to Chicago at the end of the week for a long weekend.  This is ridiculously exciting since I’ve never been there.  But scary in the sense that I don’t know where to do awesome things.  Any suggestions?

Robots Are Better Than You

I can’t lie to you blog. You’re horribly intimidating.

I sat and worried about whether or not I could commit to you for a while now. I’ve weighed some pros. Some cons. Really, there aren’t many cons that I can think of. Maybe a con would be the fear of rejection.

Yes, that’s it. I’m sure there’s a 12 year old inside of me saying “Hey lady, remember when you had a competition to see who was the weirdest between you and that awkward kid and you won? Yeah…I don’t know if you realize that means they didn’t like you.”

Although, that makes no sense because when I was 12 I didn’t realize that they didn’t like me. Weird was cool.

So maybe there’s a 22 year old inside the 12 year old inside me telling me what things really mean and suggesting opportune times to bring up insecurities so that they have a good effect.


Otherwise it’s all an excuse to not write in this blog that so far only one person knows about. Which seems silly. It is silly. I’ll just go ahead and disregard these thoughts and push forward.

I’m a 22 year old lady who lives in sin with her boyfriend, a dog that sheds a lot and a kitty that sees ghosts. I work a lot. Well, a lot in comparison to the very little I worked when in school. 40 hours. That’s a lot. I like to bake (obviously) and I love to have themes for things. Like parties. Or nights at the bar.

Will Smith party. Think about it.
